Prep: 30 min | Cook: 3 - 3.5 hours | Serves: 4-6

Ingredients

  • 1 bag of Cavendish Farms FlavourCrisp Straight Cut Fries
  • 2 lbs boneless beef short ribs
  • 1 tbsp vegetable oil
  • 1 white onion
  • 2 cloves garlic
  • 2 stalk celery
  • 1 carrot
  • 2 tbsp tomato paste
  • 2 cups beef stock
  • 1 cup cheese curds
  • Salt and pepper, to taste

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Straight Cut Fries in air fryer basket and cook according to packaging instructions.
  3. To prep, roughly dice onion, garlic, celery and carrot and set aside.
  4. To prep short ribs: Season ribs generously with salt and pepper.
  5. Heat vegetable oil in a large pot over medium-high heat; sear ribs on all sides until browned. Set aside.
  6. To the pot, add onion, garlic, celery, and carrot. Cook until softened, about 5 - 10 minutes, removing any brown bits of the bottom. Stir in tomato paste, cooking for another 2 minutes until starting to caramelize.
  7. Pour in beef stock and return short ribs to the pot. Bring to a simmer, then cover and braise on low heat for 2.5 - 3 hours or until fall-apart tender. Remove from pot and shred the beef.
  8. Strain the braising liquid and reduce by half for gravy.
  9. Assemble poutine by layering cooked Straight Cut Fries with shredded short ribs, cheese curds, and gravy!
