Braised Short Rib Poutine with Straight Cut Fries

Crispy Classic Straight Cut Fries
Made from premium potatoes, this classic French fry is sure to be a quick and convenient crowd pleaser. Perfect as a snack, side, or ingredient in your favourite recipe.
Ingredients
- 1 bag of Cavendish Farms FlavourCrisp Straight Cut Fries
- 2 lbs boneless beef short ribs
- 1 tbsp vegetable oil
- 1 white onion
- 2 cloves garlic
- 2 stalk celery
- 1 carrot
- 2 tbsp tomato paste
- 2 cups beef stock
- 1 cup cheese curds
- Salt and pepper, to taste
Directions
- Preheat air fryer to 400°F.
- Spread Straight Cut Fries in air fryer basket and cook according to packaging instructions.
- To prep, roughly dice onion, garlic, celery and carrot and set aside.
- To prep short ribs: Season ribs generously with salt and pepper.
- Heat vegetable oil in a large pot over medium-high heat; sear ribs on all sides until browned. Set aside.
- To the pot, add onion, garlic, celery, and carrot. Cook until softened, about 5 - 10 minutes, removing any brown bits of the bottom. Stir in tomato paste, cooking for another 2 minutes until starting to caramelize.
- Pour in beef stock and return short ribs to the pot. Bring to a simmer, then cover and braise on low heat for 2.5 - 3 hours or until fall-apart tender. Remove from pot and shred the beef.
- Strain the braising liquid and reduce by half for gravy.
- Assemble poutine by layering cooked Straight Cut Fries with shredded short ribs, cheese curds, and gravy!
